I’m a huge fan of making my own granola and experimenting with new flavors. After picking up some lavender from the market, I couldn’t help but figure out a granola recipe that incorporates this flavor! Lavender can be an overpowering flavor so it’s important to find the right balance with other flavors as well. This recipe has hints of honey and cinnamon along the fresh lavender herby flavor, which is an incredibly versatile flavor profile that can be used in all times of parfaits and recipes (hint: I love to sprinkle mine over ice cream!). I’m on an never-ending journey of trying to incorporate more herbs into my cooking and letting their naturally strong flavors add something new to my cooking. This mix also incorporates chia seeds and sunflower seeds for an extra nutrient kick.
Lavender Honey Granola
A fresh, light, new take on classic granola
- 2 cups rolled oats
- 1/2 cup of almonds
- 1/4 cup of sunflower seeds
- 1 tbsp chia seeds
- 1/4 tsp salt
- 1/2 tbsp cinnamon
- 1/2 tbsp lavender
- 1/2 cup condensed milk
- 1/3 cup honey
- 1/2 tbsp vanilla extract
- Preheat oven to 325 degrees Fahrenheit.
- If lavender is still in buds, use a mortal and pestle to crush into a fine (ground) consistency.
- In a medium bowl, mix together all ingredients.
- Spread mixture across baking sheet in a single layer.
- Bake for 25 minutes, stirring and reversing tray after 20 minutes to create clumps.
- Let tray cool for 5-10 minutes before stirring mixture to allow clusters of granola to set.
As I look at my stock of fresh lavender, I am planning on incorporating some of the herb into a cookie recipe. Let me know what you think in a comment below!
